Instant Yeast: You'll need yeast to help these homemade gluten-free pretzels rise and bake with a delectable pretzel bread texture. As long as it says "instant," you can use yeast in a jar or packets. Active yeast will not function the same way as quick yeast.  


Sea salt: Salt adds flavor to these pretzels! If you like, try experimenting with other seasonings, such as dried herbs or garlic powder. 


To give baked goods a bready texture, use the gluten-free baking ingredient xanthan gum. A gluten substitute is xanthan gum. You don't need to add more of this ingredient if your all-purpose flour or flour mixture already contains it. 


Baking powder is a further element required to create the incredible chewy, airy texture of this recipe. 


Water: Lukewarm, but not hot, water is what you want. If it's too hot, the yeast will be killed before it can do its job. 


Egg: Make sure your egg is at room temperature before incorporating it. 


Butter: These pretzels are rich and flavorful thanks to softened butter.


Oil: Lightly coat the mixing bowl in any kind of oil before letting the dough rise in it. Avoid wanting it to stick!


Prior to baking, homemade gluten-free pretzels are briefly boiled in a solution of water, baking soda, and sugar. This procedure enables the pretzels to bake up beautifully browned. Since most of us don't have lye at home, baking soda is the next best thing when dipping soft pretzels in a lye bath, as is custom.

HOW TO MAKE GLUTEN-FREE PRETZELS


Mix the flour, sugar, yeast, salt, xanthan gum, and baking powder in a sizable mixing bowl. By whisking, you can avoid having salty or powdery stains on your pretzels. 


Add the warm water, egg, and butter to your stand mixer along with the dry ingredients. For five minutes, or until a hard dough forms, mix with the paddle attachment.

 

You can easily make a honey mustard sauce while the dough is in the mixer!


Mayonnaise, Dijon mustard, honey, and salt are all whisked together. As you complete the remaining steps of the pretzel recipe, set them aside so the flavors can meld. 


Place the dough on a spotless surface after removing it from the mixer. Hand-knead the dough until it is smooth, then place it in a bowl that has been lightly greased. The dough should rise until nearly doubled in size in the covered bowl on the kitchen counter.

 

Depending on how warm your kitchen is, this will take 45 to 90 minutes. While you wait, set a pot of water to boil, line a baking sheet with parchment paper, and preheat the oven to 425°F (220°C). 


Spread the dough out on a lightly dusted surface. Divide it into 12 equal pieces after gently deflating it. Roll out each piece of dough one at a time into a rope that is 12 to 14 inches long.


Place the pretzel-shaped ropes on the prepared baking sheet. 


Make a baking soda bath by adding baking soda and sugar to boiling water. As soon as the mixture stops foaming, wait. Place a pretzel into the water bath at a time. They will submerge before rising to the surface again. Each pretzel only needs to be submerged for about 5 seconds. 


If desired, sprinkle some coarse salt on the pretzels before placing them back on the baking sheets. Then, depending on how browned you'd like your gluten-free pretzels to be, bake them in a preheated oven for 18 minutes or longer. 


Before serving the pretzels with a homemade honey mustard dipping sauce, let them cool for at least 10 minutes. 


Gluten-Free Pretzels are soft and chewy, just like you'd expect from a fresh hot pretzel, and are as good as or better than anything you'd find at a mall kiosk.
